Ingredients

  • 1 8oz package mushrooms, sliced
  • 1 large onion
  • 1 3-4lb boneless chuck roast trimmed
  • 1 tsp pepper
  • 1 tbsp olive oil
  • 1 - 1 oz onion soup mix pack
  • 1 14oz beef broth
  • 1 8oz can tomato sauce
  • 3 tbsp tomato paste
  • 1 tsp dried italian seasoning
  • 2 tbsp cornstarch

Preparation

Step 1

place mushrooms and onions in greased slow cooker. Sprinkle roast with pepper. Cook roast in oil in large skillet over medium-high heat 2-3 mins on each side until browned.

Place roast on top of mushrooms and onions and sprinkle with onion soup mix over the roast. Pour beef broth and tomato sauce over roast.


cover and cook on low for 8-10 hours.

Transfer roast to cutting board,, cut into large chunks removing any pieces of fat.

skim fat from juices in slow cooker; stir in tomato paste and italian seasoning. Stir together cornstarch with 2 tbsp of water in a small bowl until smooth then add to juices in slow cooker, stirring until blended. Increase slow cooker to high and cover and cook for 40 more mins or until mixture is thickened. Serve with Roast
