Shrimp Goat Cheese Quesadilla

  • 2 T olive oil
  • 1 lb shelled raw shrimp
  • 1 large ripe tomato
  • 6 sprigs cilantro
  • 2 flour tortillas
  • 8 oz goat cheese
  • 1 sliced jalapeno pepper
  • salt/pepper
  • guacamole

Preparation

Step 1

Put oil in skillet over medium high heat. Cut each shrimp into thirds. Add to skillet; raise heat to high - cook for 2 minutes, stirring once. Deseed & dice tomato, chop cilantro leaves. Remove shrimp & place a tortilla in skillet. Reduce heat to medium.

Spread shrimp, goat cheese, tomato & cilantro onto tortilla. Add chopped jalapeno, salt & pepper. Top with second tortilla and cook for 3 minutes. Flip the quesadilla & cook for 4 minutes. Remove, cut into wedges & serve with guacamole.
