Ingredients

  • 8 bone in chicken thighs (skinned)
  • 2 tbsp evoo, divided
  • 1 1/2 cups chopped red bell pepper
  • 3/4 cup chopped green bell pepper
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 2 tsp chopped fresh rosemary
  • 4 garlic cloves, minced
  • 8 oz sliced mushrooms
  • 1 1/3 cup marinara sauce
  • 1 oz shaved parmesan cheese

Step 1

Preheat oven to 350.
Heat large non stick skillet over medium high heat.
Sprinkle chicken with salt and pepper.
Add 2 tsp oil to pan, swirl to coat.
Add 4 chicken thighs and cook 4 minutes each side (until browned).
Remove from pan and keep warm.
Repeat with remaining chicken.
Add remaining 2 tsp oil to pan, swirl to coat.
Add peppers, onion, celery, rosemary, garlic and a pinch of salt; cook for 3 minutes, stirring frequently.
Add mushrooms, cook for 6 minutes, stirring occasionally.
Stir in marinara sauce, cook for 1 minute.
Spread veggie mixture in the bottom of a 13x9 inch glass or ceramic dish.
Arrange chicken on top and bake for 30 minutes.
Sprinkle with cheese.
