Ingredients

  • 1 cup 1

    cup oat flour

  • 1/2 cup 1/2

    cup wheat germ

  • 1/4 tsp. 1/4

    tsp. cinnamon

  • 1 tsp. 1

    tsp. vanilla extract

  • 1/2 tsp. 1/2

    tsp. salt

  • 2 tsp. 2

    tsp. baking powder

  • 1 1

    egg

  • 3/4 cup 3/4

    cup skim milk

  • 1 tbsp. 1

    tbsp. honey

  • 2 small 2

    small bananas, mashed

Directions

1. In a large bowl add the oat flour, wheat germ, salt, baking powder and cinnamon. Using a whisk, mix together the dry ingredients. 2. Add bananas, skim milk, vanilla extract, honey and egg in the blender and blend until smooth. Pour this mixture into the dry ingredients and using a wooden spoon, mix together. (A tip when measuring honey: Lightly spray the tablespoon with cooking spray. It comes off clean every time.) 3. Let the batter rest for 5-10 minutes. Turn on your waffle iron and once it's hot, spray it with cooking spray and use a 1/4 cup measure for each waffle. Shut the lid closed and cook until done, or manufacturer's directions.
