Polvorones de puerto rico (Puerto Rican cinnamon cookies)

Ingredients

  • 1/2 # butter
  • 1 C sugar
  • 1/2 C powdered sugar
  • 2 eggs
  • 4 C flour
  • 1 t baking powder
  • 1/2 t salt
  • 1 T brandy
  • 1/2 c sugar mixed with 2 T cinnamon

Preparation

Step 1

Preheat oven to 375 and grease a cookie sheet.

Cream the butter and both sugars.

Add the eggs one at a time mixing well after each. Add baking powder and salt, then one cup of the flour at a time beating well after each addition. Finally stir in the brandy.

Roll out dough on a floured surface to about 1/4 inch thickness. Cut dough with a small cutter and set on greased baking sheet. Bake 12 minutes until golden brown.

After removing from oven and while still hot, sprinkle with the cinnamon and sugar mixture. Allow to sit on baking sheet until set then remove to wire rack to cool.
