  • 1 cup Sugar
  • 2 Tablespoons Corn Syrup
  • 2 Tablespoons Water
  • 1/4 Teaspoon Fresh Lemon Juice
  • 1/2 cup Heavy Cream, warmed
  • 1 Tablespoon Butter, softened
  • 1/2 Teaspoon Vanilla

Step 1

Place sugar, corn syrup, water and lemon juice in a 2-cup measuring cup and stir until it is combined. Set microwave for 5 minutes. Don't go anywhere. At around 3-4 minutes, you will begin to see the color change ever so slightly. The very second you see the color change, take it out of the microwave. Mine was ready at 4 minutes 32 seconds. This is very important because if you wait until it "looks like caramel" it is too late. It will taste very burnt and bitter.

After you remove it from the microwave, let it sit for about 5 minutes. You will see it changing color and soon it will be dark like caramel. Very slowly, start pouring the warmed heavy cream into the bowl and stir it with a whisk. Be very careful because it will bubble up and will spill out if you add too much cream in the beginning. This is super hot and you don't want to get burned. After all of the cream is added, add your butter and stir until completely incorporated.

Voila, you have made yourself some very good caramel!

Hopefully... I didn't take my first batch out soon enough so it turned out bitter. I made a second batch and it turned out perfect. The secret is pulling it out of the microwave as soon as the color begins to change the slightest bit. If it turns caramel colored in the microwave, start over. It's worth it!
