Ingredients
- 6 mild fish fillets
- 3 tomatoes, peeled, chopped and seeded
- 1/2 c green olives, coarsely chopped
- 1/4 c EVOO
- 1 t thyme
- red pepper flakes to taste
- 2 cloves garlic, minced
- 1/2 c finely chopped red onion
- 1 T lime juice
Preparation
Step 1
Preheat oven to 400. Lightly grease a shallow baking dish. Place fish in dish and salt and pepper to taste. In a bowl, stir together oil, thyme, tomatoes, olives, red pepper flakes, garlic. onion and lime juice. Spoon the tomato mixture over the fish and cook uncovered in the middle of the oven 15-20 mins.
