- 1 lb. Spinach
- 2 T. Olive oil
- 1 medium Onion, chopped(1/2 cup)
- 3 slices Bacon, chopped
- 1 clove Garlic, finely chopped
- 1/2 t. Salt
- 1/4 t. Pepper
- 1/4 t. Nutmeg
- 2 T. Lime juice
Heat oil in a large skillet or dutch oven over medium heat. Cook onion, bacon and garlic in oil, stirring occasionally, until bacon is crisp; reduce heat to low.
Stir salt, pepper and nutmeg. Gradually add spinach. Toss just until spinach is wilted. Drizzle with lime juice.
