Potato Soup (Janice's)

Ingredients

  • 1 chopped onion, fried
  • 3-4 carrots, chopped
  • olive oil
  • salt
  • pepper
  • vegeta
  • 8 potatoes
  • green beans

Preparation

Step 1

Fry onion and carrots in olive oil. Add the sauteed vegetables to a pot of water. Add vegeta, salt and pepper and bring to a boil. Add potatoes (as many as you like) to the boiling water. Reduce the heat and let the potatoes get soft. Scoop out some of the potatoes and mash them. Return to soup. If it seems like it is too thin, add instant mashed potatoes to thicken it. Add salt and pepper to taste.
