Kitchen Sink Cookies

Ingredients

  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 tablespoons unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 1 teaspoon purvanilla extract
  • 1/2 cup semisweet chocoalte chips
  • 1 cup old fashioned rolled oats, crushed potato chips, pretzels, raisins, nuts, or unsweeteneed shredded coconut, or any compination.

Preparation

Step 1

1. Preheat the oven to 350. Line two baking sheets with parchment paper or silicone baking liners; set aside.

2. In a medium size bowl, whisk together the flour, baking soda, and salt.

3. In the bowl of an electric mixer, beat the butter and both sugars on medium speed until light and fluffy. Add the egg, egg yolk, and vnailla, and mix until well combined, scraping down the sides of the bowl if necessary. Add the flour mixture and mix on low speed until blended. fold in the chocoalte chips and oats or other ingredinets of your choice. (if time permits, refrigerating the dough for at least 12 hours before baking will improve the flavor of these cookies).

4. Using your hands or a cookie dough scoop, form 1 inch balls with the dough. Place the dough balls on the prepared baking sheets, about 2 inches apart. Bake until the edges are lightly browned, 9 to 10 mintues. they will look slightly underdone int he center.

5. Cool the cookies on the pans for 5 mintues before transferring to a rack to cool completely. Repeat with the remaining dough. Pack in a zipper top plastic bags, pressing out any air or in airtight contianers, separating the layers with waxed or parchment paper.
