Bucatini with Turkey Sausage & Zucchini

Ingredients

  • 12 oz bucatini or spaghetti
  • 1 T + 1t olive oil
  • 1 lb Italian style turkey sausage, casings removed
  • 1 lb zucchini, thinly sliced
  • 1 chopped large onion
  • 4 cloves chopped garlic
  • Salt & pepper
  • 1/2 C Parmesan
  • 1/4 C oregano

Step 1

Cook pasta according to package directions, or til al dente. Reserve 1/2 C cooking water; drain pasta & return to pot.
Meanwhile in large skillet, heat 1 t olive oil over med-hi heat. Add sausage, breaking it up with spoon til browned & cook thru, 10-12 min. Transfer to plate
Reduce heat to med & add remaining T of oil. Add zucchini, onion, garlic, salt & pepper. Cook, tossing occasionally, tip vegetables are golden & very tender, 15-18 min.
Toss pasta with sausage, vegetables, Parmesan, oregano & reserved water.
Serve with additional Parmesan
