Grilled Shrimp Salad Rolls

Ingredients

  • 1/3 c lemon-pepper marinade
  • 1 lg garlic clove
  • 1 lb uncooked lg shrimp
  • s&p
  • 2 T butter
  • 4 sub buns
  • 1/2 c mayonnaise
  • 3/4 c fennel
  • 2 T chopped fresh basil
  • 1 t grated lemon peel

Preparation

Step 1

In lg bowl, mix marinade and garlic. Add shrimp, toss to coat. Cover, refrigerate 1 hr. Drain shrimp, place on grill, sprinkle with s&p, cook 3 min. Spread butter on buns, toast on grill 1-2 min. Coarsely chop shrimp, place in bowl, mix with mayonnaise, fennel, basil and lemon peel. Serve salad on buns.
