Jamaican Banana Bread

Ingredients
- 2 T margarine
- 2 T cream cheese
- 1 C sugar
- 1 egg
- 2 C flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 C mashed banana
- 1/2 C skimmed milk
- 1/4 tsp. run extract
- 1/2 tsp. lime zest
- 2 tsp. lime juice
- 1 tsp. vanilla

Preparation
Step 1
Mix margarine, sugar, cream cheese, then add egg and mix.
In a separate bowl, combine flour, baking soda, baking powder, and salt.
In another bowl combine banana, milk, rum extract, lime zest, lime juice, and vanilla.
Alternately, add flour mixture and banana mixture, with margarine. Stir in 1/4 C pecans and 1/4 C coconut.
Bake at 375 degrees for 60 minutes. Cool 10 minutes on wire rack, then remove from pan to continue cooling.
Combine 12/4 C packed brown sugar, 2 tsp. margarine, 2 tsp. lime juice, and 1/8 tsp. rum extract.. Bring to a simmer and cook 1 minute, stirring constantly. Remove from the heat. Add 2 T chopped pecans, 2 T flaked coconut. Spoon over the loaf of bread.
