Strawberry Cheesecake French Toast

"I like to dress up this dish by topping it with extra powdered sugar, fresh fruit and a drizzle of maple syrup."

Ingredients

  • 4-oz. pkg. cream cheese, softened
  • 2 Tbsp. powdered sugar
  • 2 Tbsp. strawberry preserves
  • 8 slices country white bread
  • 2 eggs
  • 1/2 cup half-and-half
  • 2 Tbsp. sugar
  • 4 Tbsp. butter, divided

Preparation

Step 1

Combine cream cheese and powdered sugar in a small bowl; mix well. Stir in preserves. Spread cream cheese mixture evenly over 4 slices of bread; top with remaining slices to form sandwiches. Whisk together eggs, half-and-half and sugar in a medium bowl; set aside.
Melt 2 Tbsp. butter in a large skillet over medium heat. Dip each sandwich into egg mixture, completely covering both sides. Cook 2 sandwiches at a time for one to 2 minutes per side or until golden. Melt remaining butter and cook remaining sandwiches as instructed.
