Squash Casserole

Ingredients

  • 5-6 med zucchini, sliced in rounds
  • 1 c Jalapeno jack cheese, grated
  • 1/2 c bread crumbs
  • 1 14.5 oz can stewed, chopped tomatoes

Preparation

Step 1

Preheat oven to 350. Boil squash for 8 mins until crisp-tender. Grease 2 qt casserole dish. Place 1/2 of squash in dish. Sprinkle with cheese and crumbs. Place remaining squash on top. Cover with tomatoes. Bake 30 mins.
