Baked Mozzarella Bites

Special Extra - Top each cheese slice with a small fresh basil leaf before covering with second cracker.
Ingredients
- 1 pkg. (8 oz.) Mozzarella Cheese
- 60 RITZ Crackers
- 1 cup spaghetti sauce (your choice)

Preparation
Step 1
HEAT oven to 325°F.
CUT cheese crosswise into 15 slices, then cut each slice in half.
TOP 30 crackers with cheese; cover with remaining crackers. Place in 15x10x1-inch pan.
BAKE 8 min. or until cheese begins to melt. Meanwhile, heat spaghetti sauce. Serve cracker sandwiches as dippers with sauce.

Wish I had read all the comments before making. Made a huge batch to keep for snacking, but as others have said, once cooled, they became soggy. Not so good once that happens. I'll make it again because I did like it, but I'll make it in smaller batches so I can finish it before they get soggy.

This is an easy and quick snack to make for the kids. I make them whenever I have my kids' friends over. They are gone in minutes!
LOVE THIS!! It was so simple, yet so good! My husband has to watch what he eats, and really misses mozzarella sticks. This is a great and healthy alternative! I used the whole grain Ritz, and used spaghetti sauce to dip it. Everyone loved them, and couldn't believe how something so simple could be so good! It would even be good with deli turkey or pepperoni!
Very good...no leftovers! Next time, I'll try them with basil.
I made this for the Super Bowl. EVERYONE loved it! I added 2 slices of pepperoni to it and it turned out awesome!

Hubby and kids loved this one - to me they were bland and unexciting. If I do make them again I will use the marinated/flavored mozzarella from the deli.
I made these for a snack at my son's birthday slumber party this last weekend. The boys loved them. I baked mine on a cooling rack that fit inside one of my cookie sheets and did not have a problem with the crackers getting soggy.
I didn't have any problems with them getting soggy. They were great.
I thought it was a GREAT idea. I wish the crackers would stay crunchy. I thought (and so did the party guests I made it for) it lacked so much with soggy crackers. We were disappointed.
Great, fast , recipe! They were good baked and with pizza or spaghetti sauce. My kids loved them. One time, I didn't have time to heat up the oven so I microwaved 6 at a time on a microwave safe plate for 15 - 20 seconds and they came out just fine, and the crackers stayed crispy. We make these a lot now.
I was really excited about this recipe because I love mozzarella sticks. But these just didn't cut it for me. My husband liked them as long as they were covered in spaghetti sauce.

Made them for my Christmas Eve gathering was not a hit, when the crackers got cold they began to get soggy, and reheating in the microwave made them even worse.
These were pretty good. The kids and husband loved them. I thought they needed a little something, so next time I am going to sprinkle the cheese with McCormick Brand Pizza Grinder Seasonings before putting the tops on. Easy snack!
