Eggplant Casserole (Mom's)

Ingredients

  • eggplant
  • 1 egg
  • bread crumbs
  • spaghetti sauce
  • mozzarella cheese
  • grated romano cheese

Preparation

Step 1

Peel eggplant. Slice thin (1/4 inch).
Coat with egg and bread crumbs.
Fry in oil until golden brown

In casserole dish, cover the bottom with spaghetti sauce. Layer eggplant, then sauce, shredded mozzarella cheese and grated romano cheese.

Bake on 350° for 35 minutes, covered. Then uncover and bake 15 more minutes.
