Ingredients

  • 2 1/2 cups rustic bread, cut into 1" cubes
  • 1/3 cup olive oil + 1 1/2 Tbs olive oil
  • 3 oz fontina cheese cut into 1/4" cubes
  • 4 oz ham cut into bite-sized pieces
  • 1 cup celery, diced
  • 1 cup cherry tomatoes, halved
  • 1 clove garlic, minced
  • 1/3 cup diced red onion
  • 3 cups romaine, torn into bite-sized pieces
  • 2 Tbs red wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper

Step 1

1. Toss bread cubes with 1 1/2 tbs olive oil, spread on baking sheet, bake at 350 for 15", tossing twice, until crisp and lightly browned
2. In glass mixing bowl, whisk the vinegar, salt, pepper and garlic. Drizzle in the 1/3 chip olive oil.
3. Add the tomatoes, onions, celery and cheese to vinegar mixture. Toss yo coat. Let stand 5 minutes. Add lettuce and ham, toss again. Plate and serve.
