Ingredients

  • 3/4 c. 7 grain cereal
  • 2 1/4 c. boiling water
  • 1 3/4 T. dry yeast
  • 1/2 c. warm water
  • 1/2 tsp. sugar
  • 1/4 c. brown sugar
  • 3 T. butter
  • 3 T. molasses
  • 2 T. salt
  • 1 1/2 c. milk
  • 3 c. whole wheat flour
  • 4 c. all-purpose flour

Step 1

Cook 7 grain cereal in the boling water until soft (10 min). Soften the yeast in the 1/2 c. warm water with the 1/2 tsp. sugar. Set aside until the yeast doubles in volume. Place the butter, brown sugar, molasses, salt and milk into mixing bowl, add the hot cereal. Add yeast and start mixing. Add flour 1 c. at a time until dough is stiff enough to turn out on a floured boasrd and knead for 10 min. It will be sticky. Let rise in a bowl in a turned off oven, with a small saucepan of hot water on the bottom shelf of oven. Let rise until doubled, approx. 1-2 hours. Separate into 2 pieces. Knead into even balls, let rest 10 min., then flatten, roll lengthwise and tuck ends under to shape loaves. Put into very well greased bread pans (2 9/x5 loaf pans). Return to oven with more hot water in saucepan and let rise until double (1 hour). Bake 375 degrees 30-40 min., or until bread sounds hollow when tapped. Remove from pans and cool on racks. Do not cut bread until completely cool. Makes 2 large loafs.
