Chipotle & Maple Pork Tenderloin

This big, bold-flavoured dish may be enjoyed at room temperature or cold, sandwiched between thick slices of crusty artisan bread.

Ingredients
- 2 small canned chipotle peppers
- 1/3 cup Long's pure maple syrup
- 1 tbsp Western Family Dijon mustard
- 1 tbsp adobo sauce (from canned chipotle)
- 1/2 tsp Longo's dried thyme leaves
- 1 pork tenderloin (about 1 lb/454g)
Preparation
Step 1
1. In a blender or a small food grinder, puree chipotle, maple syrup, mustard adobo sauce and thyme until smooth. Set half of the sauce aside. Pour remaining sauce over pork tenderloin in a shallow dish and turn to coat well.
2. Place pork tenderloin in 400F (200C) oven for about 20 minutes or until meat thermometer registers 160F (70C). Transfer to cutting board and let rest for 5 mins. Slice thinly and serve with reserved sauce.
