Fig Cookies - Grandma Jennie
The best fig cookie ever! Fun to have a party to make them.
Ingredients
- Dough:
- 2 1/2 lbs flour
- 1 tsp. salt
- 3 eggs
- 1 cup warm milk
- 2 cups sugar
- 2 tsp baking powder
- 4 sticks butter
- 1 tsp vanilla
- Filling:
- 2 lbs figs
- 1 lb dark raisins
- 1 lb white raisins
- 1/2 tsp cloves
- 1/2 lb grd. almonds toasted
- 2 tsp cinnamon
- 1 cup honey melted w/fig juice

Step 1
Dough:
Beat eggs, add warm milk, salt, vanilla, sugar and butter. Add dry ingredients - salt, baking powder & approx. 2 1/2 lbs flour (till dough is workable)
Chill.
Filling:
Soak figs in 2+cups of hot water; leave in fridge for 2-3 days. Drain, reserve juice & mix w/honey. Melt honey w/juice over low heat. Chop fruit (can use food processor) & mix all ingredients.
Roll out dough in small batches. Cut in 2 inch rounds, fill w/filling and fold in half. Pinch edges together.
Roll 1/8" 350 degrees for 20 min.
Roll 1/4" 375 degrees for 20 min.
Bake until browned. Can be drizzled with icing or served plain.
