Bacon Spread II

Ingredients

  • 1 1/2 pounds bacon
  • 2 medium onions
  • 2 teaspoons garlic powder
  • 1/2 cup (packed) brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup apple cider vinegar
  • 6 tablespoons of coffee
  • 6 tablespoons bourbon whiskey

Preparation

Step 1

. Cut up the bacon into 1-inch slices, and then cook in two skillets on medium high heat, about 20 minutes or until the bacon starts to crisp.Remove the bacon to drain on paper towels. Drain off and dispose of all of the leftover grease except one tablespoon.

2. Put the tablespoon of grease into a skillet, and add the onions and garlic , cook them on medium high heat until they're translucent. This takes about 5 minutes. Then add the coffee, vinegar, maple syrup, and bourbon, and bring it to a boil. Boil it for one or two minutes, and then add the bacon. Let the mixture cook for about 2 or three more minutes,and then empty the entire skillet into a slow cooker (6 quart size crock pot).

3. Let your mix cook for about 3 1/2 to 4 hours on the 'hi' setting on the slow cooker - uncovered, to boil off more liquid. It will begin to be a chocolatey-brown color on top.

4. empty the contents of the slow cooker into a food processor, and pulse the processor until the entire mix is finely diced. At this point, you're ready to put it into containers to refrigerate. The mix will stary good for about a month if cooled.
