Walnut Crusted Salmon

Ingredients

  • Marinade:
  • 1/2 C white wine
  • 1/4 C lemon juice
  • 2 T olive oil
  • 1 tsp. chopped garlic
  • 1/2 tsp. crushed rosemary
  • 1/2 tsp. crushed thyme
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 (8 0z.) salmon fillets, skin on
  • Crust:
  • 1 C finely chopped walnuts
  • 1 C finely chopped croutons
  • 1 T chopped oregano
  • 1 T chopped chives
  • 2 T olive oil
  • 2 T lemon juice

Preparation

Step 1

Mix marinade in baking pan. Add salmon and turn to coat. Marinate for 10 minutes. Preheat oven to 400 degrees.

In a small bowl, mix crust ingredients.

On a grill, place salmon skin side up (4 minutes) Remove and place on foil-lined baking sheet, skin side down. Lightly brush with marinade. Sprinkle crust on top. Bake 4 to 6 minutes, or until the salmon is cooked to the desired doneness, and the crust is golden.
