BLT Bites

Ingredients

  • 24 slices baguette
  • 2 T butter
  • 8 slices bacon
  • 1/3 c mayonnaise
  • 1/4 c basil pesto
  • 2 c loosely packed fresh baby spinach leaves
  • 6 roma tomatoes
  • pepper

Preparation

Step 1

Heat oven to 425. Place baguette slices on ungreased cookie sheet. Brush tops with melted butter. Bake 6-8 min til golden brown. Cool 10 min.
Meanwhile, in skillet, cook bacon til crisp. Drain on paper towel. Break each piece into 3 pieces.
In sm bowl mix mayo and pesto til well blended. Spread mix over baguette slices. Top each with 2 spinach leaves, 1 tomato slice and 1 bacon piece. Sprinkle with pepper.
