Ingredients

  • 1 1/4 lb asparagus
  • 1/2 C olive oil
  • 3 T red wine vinegar
  • 2 T roasted red peppers, coarsely chopped
  • 1 clove smashed garlic
  • 1/2 t Dijon mustard
  • 3/4 t minced thyme
  • pinch sugar
  • Salt & pepper

Preparation

Step 1

Cook asparagus til tender; drain well
Meanwhile in processor combine oil, vinegar, red pepper, garlic, mustard, thyme, sugar, salt & pepper; blend til smooth. Drizzle 1/3 over asparagus. Reserve dressing to drizzle over broccoli or salads.
