Ingredients
- 1 1/2 lbs beef, cubed
- 3/4 C. uncooked barley
- 1/2 C green peppers, diced
- 2 cloves garlic, minced (I just chopped mine)
- 1 small onion, chopped
- 1/2 C. celery, chopped
- 1 C. baby carrots in 1" pieces (I used a regular carrot and cut it in 1" pieces)
- 1 tsp. thyme
- salt and pepper
- 3 (14 1/2 oz. cans) beef broth
- 1 (28 oz. can) petite diced tomatoes
- 1 1/2 C water
Preparation
Step 1
Place all ingredients into slow cooker. Cook on low for 8 to 9 hours or high for 5-6 hours or until carrots are tender.
