Ingredients
- 1-1/3 cup Minute Rice
- 5-1/2 cups skim milk
- 2/3 cup sugar
- 1 - teaspoon salt
- 2/3 cup raisins
- 4 - eggs
- 2 - teaspoon vanilla
- 1/2 teaspoon cinnamon -- ground

Preparation
Step 1
Bring:
rice
milk
sugar
salt
and raisins to a boil, stirring frequently
Reduce heat, simmer 10 minutes, stirring constantly
Mix:
eggs
vanilla
and cinnamon together in 3 to 5 qt casserole dish
Slowly stir in rice mixture from pan to casserole dish; mix well
Sprinkle a small amount of cinnamon on top of the liquid
Place in pan of hot water and bake at 375 degrees 50-60 minutes or until center sets
