CHICKEN SALSA VERDE CASSEROLE

Ingredients

  • 2 chicken cooked and cut in small chunks
  • 1 can cream of chicken soup
  • 1 c. mayonnaise
  • 1/4 c. chopped green onions
  • 2 c. shredded Cheddar/Monterey Jack blend cheese + more for top
  • 1 jar La Victoria Medium Salsa Verde, – Thick – maybe 2 jars
  • 1 pkg. white corn tortillas
  • 1 can sliced black olives

Preparation

Step 1

In large bowl mix soup and mayonnaise until blended together. Add green onions, olives and cheese. Mix. Add chicken. Mix until blended.
Line bottom of casserole dish with a layer of tortillas. Pour salsa verde sauce over tortillas, then spread on chicken mixture. Continue to repeat layers until casserole dish is full. Then top with a layer of tortillas. Add more salsa verde and cheese. Bake at 350 degrees for 45 minutes.
