No need to run to Taco Bell for burritos supreme when you've got this recipe! The meat is mixed with seasoning before cooking. This is supposed to be Taco Bell’s recipe for their taco meat. Fred is their number one fan (he gets a preferred customer discount here, no lie) and he says that it is close so it must be. I don’t care whose it is, it is quick and easy so I use it.

Ingredients

  • 1 pound ground beef
  • 1/4 cup all-purpose flour
  • 3 tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon dried minced onion
  • 1 teaspoon paprika
  • 1/2 medium onion, diced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 cup water
  • 8 (10”) flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • 1 medium tomato, diced
  • 1 cup diced yellow onion

Step 1

In a medium bowl, combine the ground beef with the flour, chili powder, salt, minced onion, paprika, onion powder, and garlic powder. Thoroughly mix the ingredients into the ground beef.

Add the seasoned beef mixture to the water in a microwaveable bowl. Mix well and microwave on high for three minutes, break the meat up well and microwave 2 minutes more, stir the mixture and break the meat up again. Microwave 2 minutes more.

Spread about 2 tablespoons of shredded cheese in the middle of each tortilla. Microwave two at a time for 20 seconds. Top with some of the meat mixture. Fold the end of the tortilla closest to you over the filling ingredients. Fold both the left and right end over that. Then fold the top edge over the filling.

Spray a plate lightly with a cooking spray and place two burritos, seam side down, on a plate with rice or refried beans. Cover the burritos with enchilada sauce. Heat the plates in a 425 F oven for 5 minutes. (Make sure you are using oven safe plates!)

Cover the burritos with more shredded cheese and heat 5 minutes more. Remove from oven.

Garnish the burritos with chopped onion, diced tomato and avocado slices. Serve immediately, but warn you guest that the plates are very hot.

These can be made ahead and refrigerated. Heat them in the preheated oven for 10 minutes, cover with cheese and heat 5 minutes more.These can also be heated in the microwave.
