Ingredients
- 1/3 C olive oil
- 2 cloves garlic, minced
- 1/2 C coarsely chopped carrots
- 1/2 C coarsely chopped celery
- 1/2 C coarsely chopped onion
- Turkey Italian Sausage
- 14 1/2 oz. Italian stewed tomatoes
- 1 C small pasta
- spinach
- 19 oz. canned, undrained cannellini beans
- 1/4 tsp. salt
- 1/4 tsp. pepper
- grated parmesan cheese
Preparation
Step 1
Heat oil in large pot over medium heat. Add onion and garlic and sauté 1 minute. Stir in carrots and celery; cook 3 - 4 minutes until nearly tender. Add sausage and cook 3 minutes, stirring often.
Add broth and tomatoes; increase heat to high, cover and bring to boil. Add pasta; reduce heat and simmer 10 minutes, stirring occasionally until pasta is almost tender. Stir in spinach and simmer uncovered until wilted.
Add un-drained beans, salt, and pepper. Simmer 5 minutes to heat through. Sprinkle with parmesan in bowls as it is served.
