Tia’s Artichoke Frittata

Ingredients

  • 4-6oz. jars of marinated artichoke hearts
  • 8 eggs
  • 1/2 tsp. pepper
  • 1/2 tsp. liquid pepper
  • 1/2 cup chopped parsley
  • 1 lb. shredded sharp cheddar cheese
  • 1/2 cup bread crumbs
  • 2 sm. yellow onions, chopped
  • 2 + cloves garlic, chopped

Preparation

Step 1

Drain artichoke oil from the 2 jars in skillet and saute garlic and onion until limp.

Beat eggs in a large bowl and add ALL ingredients.

Pour into 13x9x2 buttered pan.

Bake at 325° for 30 minutes.
