Coconut oil, ideal for high temperature pan frying & searing, lends a sweet tropical flavor to this dish. Tuna is delicious but feel free to substitute any firm whitefish, including mahi mahi, halibut or sturgeon.

Ingredients

  • 4 − 6oz tuna steaks (about 3/4 inch thick)
  • 2 T crushed cumin seeds or ground cumin
  • 1/4 t garlic powder
  • 1/4 t salt
  • 1/8 t ground cayenne pepper (more or less to taste)
  • 2 T unrefined coconut oil
  • 2 T freshly squeezed lime juice
  • 2 T coarsely chopped fresh cilantro
  • lime wedges for garnish (1 lime)

Step 1

1. In a small bowl, combine cumin, garlic powder, salt, & cayenne pepper; stir to blend.
2. Sprinkle cumin mixture evenly over fish, coating it completely.
3. Heat coconut oil in a large skillet over high heat until hot. Place fish in hot skillet, partially covering the skillet w/a lid to lessen the splattering.
4. Sear for approx. 3 min. Turn fish over & sprinkle w/lime juice, continue to cook until lightly browned on the outside & opaque in the center, approx. 3 min.
5. Transfer fish to plates, garnish w/cilantro & lime wedges.
