No Bake Energy Bites

Ingredients

  • 1 C (dry) oatmeal (I used old fashioned oats)
  • 2/3 C toasted coconut flakes
  • 1/2 C peanut butter
  • 1/2 C ground flax seed or wheat germ
  • 1/2 C chocolate chips
  • 1/3 C honey
  • 1 tsp vanilla extract

Preparation

Step 1

1. Stir all ingredients together in a medium bowl until thoroughly mixed.

2. Let chill in refrigerator for half an hour.

3. Once chilled, roll into balls or whatever size you would like. Mine were about 1" in diameter.

4. Store in an airtight container and keep refrigerated for up to 1 week.
