Rosemary-Garlic Baked Chicken

This tangy dish couldn't be simpler. Serve it with roasted potatoes and a green salad

Ingredients

  • 1 small onion, chopped
  • 1/4 c. red wine vinegar
  • 1 tbsp olive oil
  • 1 tbsp dijon mustard
  • 1 tbsp chopped fesh rosemary, or 1 tsp dried, chopped
  • 2 garlic cloves, cut into thin slivers
  • 1 (3 1/2 #) chicken, cut in eighths, skin removed

Preparation

Step 1

Preheat the oven to 400 degrees. Spray a 9 x 13 inch baking pan with nonstick spray.

Combine the onion, vinegar, oil, mustard, rosemary, garlic, and salt in a small bowl.

Place the chicken in the baking pan. Spoon the onion mixture on top of the chicken. Bake until the chicken is browned and cooked through (do not turn), about 45 mintues.
