  • 1/2 cup dry bread crumbs
  • 2 boneless skinless chicken breast halves (6 ounces each)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons butter, melted

Step 1

•Place crumbs into a shallow bowl. Flatten each chicken breast to
1/2-in. thickness; brush with mustard, then coat with crumbs. Place
in an 11-in. x 7-in. baking dish coated with cooking spray; drizzle
with butter. Bake, uncovered, at 350° for 20-25 minutes or until
juices run clear. Yield: 2 servings.
