Crustless California Shrimp or Pancetta Quiche

Ingredients

  • 2 tbsp. 2 tbsp. butter
  • 1 c. 1 c. sliced mushrooms
  • 1 c. 1 c. chopped onions
  • 2 tbsp. 2 tbsp. dry white wine
  • 6 6 eggs
  • 1 1/2 c. 1 1/2 c. milk
  • 1/4 c. 1/4 c. flour
  • 1 tsp. 1 tsp. seasoned salt
  • 1 1/2 c. 1 1/2 c. cooked baby shrimp or cooked, crisp bacon or pancetta for more traditional quiche.
  • 2 c. 2 c. shredded Swiss cheese

Preparation

Step 1

Saute mushrooms and onions in butter. Add wine. Set aside

Beat eggs; add milk, flour and salt.

Stir in shrimp (or bacon), cheese and mushroom mixture.

Cover and chill until ready to bake.

When ready to bake, stir well and turn into buttered quiche dish or deep pie plate.

Bake in 350° oven 50-55 minutes, or until center is firm.
