***Cornish Hens and Wild Rice - Auntie Mimi’s

My sister gave me this recipe when I was cooking my first dinner for Steve. Creamed Spinach was the accompaniment.

Ingredients
- 1 c. soy sauce
- 1/2 c chicken stock
- 4 tbsp. olive oil
- 3 tbsp. sugar
- 3 tbsp. whiskey or gin
- 1/2 tsp. ground ginger
- 1 clove garlic
- 2 Cornish Game Hens, halved(could also use Duck)
- Cooked Uncle Ben’s Wild Rice
Preparation
Step 1
Mix all marinade ingredients together.

Add Cornish game halves and marinate for 3 hours in refrigerator.

Bake hens in marinade in baking dish for 1 hour at 400 degree oven.

Baste often.

Serve over bed of Wild Rice with Creamed Spinach on the side
