Herb Roasted Potatoes

Ingredients

  • 12 new potatoes (about 2 pounds), cut into wedges
  • 1/4 cup olive oil
  • 2 garlic cloves, pressed
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp dried oregano
  • 1/8 tsp ground red pepper

Preparation

Step 1

Toss together all ingredients in a large bowl; spread mixture evenly into a lightly greased, aluminum foil-lined 13- x 9- inch baking dish.

Bake at 425° for 30 minutes or until tender.
