Ingredients
- 4 sweet peppers
- 1/2 mayonnaise
- 2 T fresh basil
- 1 T fresh parsley
- 1 T fresh tarragon
- 2 loaves french bread, halved
- 2 c fresh baby spinach
- 2 c alfalfa sprouts
- 4 med tomatoes, sliced
- 2 med ripe avocados, sliced
- 6 slices Swiss cheese, halved

Preparation
Step 1
Broil peppers til all sides are blackened and blistered. Place in lg bowl, cover and let stand 15-20 min. Peel off skin, remove seeds and stems, julienne cut. Combine mayo, basil, parsley, tarragon and spread over bread bottoms. Top with spinach, sprouts, peppers, tomatoes, avocado and cheese. Replace top, cut into slices.
