Ingredients
- Bottom layer:
- 1/2 C soft shortening (half butter)
- 1/2 C brown sugar (packed)
- 1 C flour
- Topping:
- 2 eggs
- 1 C brown sugar (packed)
- 1 tsp. vanilla
- 2 T. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 C. shredded coconut
- 1 C chopped nuts
Preparation
Step 1
Mix thoroughly the shortening/butter and brown sugar, then stir in 1 C flour for the bottom layer. Press and flatten to cover the bottom of an ungreased 13x9" baking dish. Bake 10 minutes.
Beat well 2 eggs, then stir in the brown sugar and vanilla. Add the flour, baking powder and salt. Mix well. Then mix in the coconut and nuts.
Spread on top of the bottom layer, which has been baked 10 minutes and cooled. Return to the oven and bake 25 minutes until topping is golden brown. Cool slightly, then cut into bars.
About 2 1/2 cozen 1x3" bars.
