Chili con Carne

This is an easy Chili Con Carne recipe. I have listed two variations. One using Brooks Chili Beans in Chili sauce (if you can find them) The other is adding your own seasonings and unseasoned beans.

Ingredients

  • If using the Brooks beans add the following:
  • 2 lbs lean ground beef
  • 1 cup chopped onion
  • 1/4 cup diced green pepper
  • 2 large garlic cloves, minced
  • 2 16 oz cans diced tomatoes
  • 1 15 oz can tomato sauce
  • 1 teaspoon salt
  • 2 14 ounce cans dark red kidney beans (Bush's is good)
  • 3 cups water
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried oregano, crushed
  • 3/4 teaspoon corriander
  • 1 teaspoon ground cumin
  • 1/2 ounce of a good semi sweet chocolate
  • 1 1/2 teaspoon Chili powder or to taste
  • 1/2 teaspoon ancho chili pepper
  • 2 15 ounce cans Brooks Chili Beans in Chili Sauce. Hot or mild
  • Chili powder to taste - at least 1 1/2 teaspoon.
  • Ancho chili pepper to taste.
  • Omit the rest of the spices.
  • 1 ounce of a good semi sweet chocolate

Preparation

Step 1

In a 5 quart Dutch oven over medium heat in hot oil saute onion, green pepper, garlic and ground beef until browned. Drain.
Add all other ingredients and rinse cans with 3 cups of water. Add water to the pot. Stir to mix and bring to a boil.
Reduce heat to low, cover and simmer stirring occasionally, for 1 hour. Recheck seasoning. Serve with cornbread or chips, sour cream and cheese.
