Ingredients
- 1 lb boneless chicken breasts, cut into 1/2 inch strips
- 2 tsp garlic seasoning blend
- 1 small onion, chopped
- 1 tbs olive oil
- 1 garlic clove, minced
- 1 (14 1/2 oz) can diced tomatoes, undrained
- 1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
- 1 cup chicken broth
- 3/4 cup uncooked orzo pasta
- 1 tsp Italian seasoning
- 1/8 tsp red pepper flakes, crushed
- 1/4 cup Parmesan cheese
Preparation
Step 1
Sprinkle chicken with garlic seasoning. In a large skillet, saute chicken and onion in oil for 5-6 minutes or until chicken is no longer pink. Add garlic; cook 1 minute longer.
Stir in the tomatoes, spinach, broth, orzo, Italian seasoning and pepper flakes. Bring to a boil;reduce heat. Cover and simmer for 15-20 minutes or until orzo is tender and liquid is absorbed. Garnish with cheese if desired.
