Lemon Bread

Ingredients

  • 1/4 cup plus 2 tablespoons margarine
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon grated lemon rind
  • 1/2 teaspoon vanilla extract
  • 2 1/4 cup flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 (8 oz.) carton lemon yogurt
  • 1/2 cup sugar
  • 1/2 cup lemon juice
  • 1 teaspoon vanilla extract

Preparation

Step 1

Preheat oven to 350 degrees.

Cream margarine and add sugar gradually. Beat at medium speed until light and fluffy.

Add egg, lemon rind and vanilla. Beat until well-blended.

Combine the flour, baking powder, baking soda and salt in a bowl.

With mixer at low speed, add dry ingredients alternately with yogurt, beginning and ending with flour mixture.

Pour batter into loaf pan, coated with cooking spray.

Bake for 55 minutes.

Combine sugar and lemon juice. bring to a boil, and boil for one minute. Pour over bread that has been pierced with a fork.
