Basil Chicken with orzo

Ingredients

  • 1/2 cup orzo
  • 2 tsp olive oil
  • 1 diced tomato
  • 1/2 cup sliced green onions
  • 4 oz crumbled feta cheese
  • salt and pepper to taste
  • chopped cooked chicken breasts (as much as you'd like) 1/2-1 cup chopped fresh basil

Preparation

Step 1

Coat casserole with cooking spray.
Cook orzo in boiling water about 5 minutes then drain.

Place orzo in a large bowl and then add all other ingredients then cover tightly with foil.

Place in casserole and bake at 400° about 20 minutes

I use the tri colored orzo and add more of the tomato, onions, basil.

Can be made the day before and reheated.
