FLOATING ISLAND CUSTARD

Ingredients

  • 3/4 cup sugar
  • 1 tablespoon plus 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 4 eggs separated
  • 4 cups milk
  • 1-1/2 teaspoons vanilla extract
  • 1/4 cup sugar
  • Boiling water
  • Pound Cake

Preparation

Step 1

Combine first 3 ingredients in large saucepan, stirring well. Beat egg yolks, and stir into sugar mixture, stir in milk. Cook mixture, stirring constantly, over medium heat 15-20 minutes, or until mixture thickens and coats a metal spoon. Pour mixture into large bowl, and stir in vanilla. Let cool, then cover and chill for at least 8 hours.

Beat egg whites (at room temperature) until stiff peaks form. Gradually add 1/4 cup sugar, 1 tablespoon at a time, beating until stiff peaks form. Pour about 1" of boiling water into a 13x9x2" pan, drop meringue by 1/2 cupfuls onto water. Bake at 350 degrees for 15 minutes. Place meringue over custard using a slotted soon. Cover and chill until serving time. Serve custard and meringue plain or over pound cake.
