Ingredients
- 3 Cups of Boiling Water
- 2 oz Sun Dried Tomatoes (1/4 Cup)
- 12 oz Bow-Tied Pasta, Cooked
- 2 Tbsp of Extra Virgin Olive Oil
- 1/8 Tsp of Salt
- 1/8 Tsp of Pepper
- 2 Garlic Cloves, Minced
- 10 oz Bag of Fresh Spinach, Torn
- 1 1/2 Cups of Asiago Cheese, Grated
- 1/2 Cup Parmesan Cheese, Grated
Preparation
Step 1
Combine Boiling Water and Tomatoes in a bowl and let stand for 25 minutes (You can cook Pasta while Tomatoes are cooling). Drain and Chop Tomatoes. Combine Tomatoes, Oil, Salt, Pepper, and Garlic in large bowl. Add Hot Pasta, Spinach and toss lightly. Sprinkle with cheeses and toss gently. Serve immediately.
