Veal: Stuffed Chops

I came up with this recipe on date night. It was absolutely incredible.

Ingredients

  • 2 bone in/ 2" thick veal chops
  • 1 Sprig of basil
  • 6 to 8 spinach leaves
  • 1/4 lb fontina cheese
  • olive oil
  • salt and pepper

Preparation

Step 1

Preheat oven 450*

Slit the veal chops in half all the way to the back of the bone. Stuff with 2 basil leaves, spinach and a big chunk of cheese. With toothpicks seal the slit as tight as possible. Rub the chops with olive oil and season with salt and pepper. In a nonstick skillet, sear the meat until carmilized and then place in the oven for 15 minutes. Let rest 10 minutes before serving.
