Ingredients

  • 1 (1 oz) pkg sugar-free fat-free pudding mix
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 1/2 cups 1% milk
  • 1 cup pumpkin puree (not pie filling)
  • 1 cup fat free whopped topping
  • 3 gingersnap cookies crushed to crumbs - or substitute chopped walnuts
  • 2 tbsp. finely chopped crystallized ginger

Step 1

1. Whisk pudding mix and spices together. Add milk and whisk for 2 minutes. Add pumpkin and whisk until combined, then continue until begins to set. Fold in Whipped topping. Cover and refrigerate for 1 hour.
2. For each serving, put 1/4 cup mousse into dessert dish. Add a layer of crumbs. Add another layer of mousse and top with crumbs. Sprinkle top of each with 1 tsp ginger.
