Creamed Spinach

Ingredients

  • 1 medium yellow onion
  • 1 clove garlic
  • 3 tbsp. butter
  • 1/4 tsp. white pepper
  • 2 tbsp. flour
  • 1 1/2 milk, warmed
  • 1/4 tsp. nutmeg
  • 5 slices bacon, cooked and chopped.
  • 2 packages froz. spinach, cooked and squeezed dry.
  • Salt & Pepper to taste

Preparation

Step 1

Saute onion and garlic in butter until limp, but not browned. Whisk in flour and white pepper making a roux. Keep whisking and cook three minutes, but try not to get too brown. Add warm milk in a fast stream, whisking constantly to prevent lumps, and simmer, whisking, until thickened, 3 to 4 minutes. Stir in nutmeg, spinach,bacon, and salt and pepper to taste and cook, stirring, until heated through.
