Spinach/Mushroom Bake

Ingredients

  • 5 10-ounce packages frozen chopped spinach
  • 2 cups chopped mushrooms
  • 1/4 cup butter
  • 1 1/3 cups grated Parmesan Cheese, reserve 1/3 cup
  • 3/4 cup sour cream
  • 3/4 cup heavy cream
  • 1 tablespoon dried onion flakes
  • 1 teaspoon horseradish
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • cherry tomatoes (add later)

Preparation

Step 1

Preheat oven to 350°
Cook spinach and drain. Saute mushrooms in butter until soft. Combine all the ingredients in a bowl. Spread mixture in buttered 9 x 13 baking dish. Sprinkle with reserved 1/3 cup parmesan cheese. Bake 15 minutes; garnish with tomatoes and bake until set, about 10 minutes more.
